The title basically says it all.  Many are amazed to find tasty and inexpensive baked goods can be prepared without these problematic ingredients.

My son and I collaborated on this book to develop a wide range of zucchini recipes, from appetizers and salads to entrees and baked goods.

 

 

 

It may surprise you to learn that Kim is a "lazy cook" at heart, and only develops recipes meeting the following criteria   

 

         See if it appeals to you as well:

  • only whole natural ingredients (and as few ingredients as possible)

  • real ingredients- easy to find and purchase at a reasonable price, ones I would have on hand as staples (I don't want to make a special trip to the grocery store)

  • minimally processed ingredients (for instance- dried herbs are okay, but no prepared foods like ketchup, vanilla, soy sauce or rice milk, etc.)

  • avoiding common allergens (like wheat, corn, soy, sugar, dairy, etc.)

  • only natural, unrefined fats

  • no sugars (even natural sweeteners are only used sparingly on occasion)

  • low in sodium, using only unrefined sea salt

  • no inconvenient amounts (like "1 Tbsp. tomato paste" or "1/3 cup crushed pineapple"- what are you supposed to do with the rest?!)

  • no multiple step recipes (reduced to as simple a preparation process as possible)

  • minimal number of pots, pans and dishes used in preparation 

And Kim puts a high priority on a good layout for the final recipe- easy to follow, simple directions, and the ingredients are ordered and grouped conveniently.


Featured Recipe: Fruit Smoothie

 

What makes our recipe different from others? 

All whole ingredients- naturally sweet and creamy, with no dairy, non-dairy milks or sweeteners.
 

2 oranges                                      1/3 cup nuts*

2 handfuls of blueberries,           ½ cup water or ice 

   strawberries, pineapple,           2 frozen bananas

   grapes or whatever fruit            opt: 1 apple

   you may have on hand            opt: 2 Tbsp. flax oil

 

Peel, cut and add fruits to the blender.  Add rest of ingredients and puree till smooth.  (I like to puree the orange sections, nuts, water and any ‘seedy’ berries before adding the other ingredients, to make sure they are thoroughly processed.) 

 

*Nuts: walnuts, almonds, pecans- ideally presoaked.

 

Variations:  In place of the 2 whole oranges, you can use a cup of orange juice (ideally, fresh squeezed).

A handful of spinach can also be added during the final blending for an additional nutritional boost!
